New old stock 2.75" & 15.85" cuisine massive (AKA Nogent style) paring and chef knife.
Both made in the 1950s in Thiers France using techniques and most likely equipment from the late 19th and early 20th century; hand forging on a martinet hammer after drop forging and grinding by hand on water cooled wheels. The big knife has the old style S grind that is seen on some of the large format old French knives, the work on it is really, really superb, there's nothing like seeing how the old grinders worked. It's a world long since passed but luckily preserved here.
