INGREDIENTS (SERVING FOR 4 PEOPLE)
-1/2 cup diced onion
-2cloves minced garlic
-1cup mixed bell pepper
-1/2 cup cherry tomatos
-1/2 cup pinto beans
-1tsp cayyene pepper powder
-1tsp cumin powder
-salt and black pepper to taste
-cilantro 1/4 cup
-tortilla
-3tbsp olive oil
-butter for rubbing the pan
- shredded cheese
-sour cream
INSTRUCTION
STEP-1
In a large pan add 3tspn olive oil, fry onions and garlic on medium high heat.
then proceed to add mixed bell pepper,then add tomatos,pinto beans,stir for a min,then add spices,stir and cover the lid for 5 mins.
STEP-2
Rub some butter into the pan on low heat,then place the tortilla,add 3-tspn sour cream,then add shredded cheese,and then add quesadilla mixture,add another later of cheese on top and top it off with the tortilla,press down lightly so the quesadilla sticks together,cook each side for 2mins,
repeat step for the remaining mixture
