APPLE PIE
For the Crust:
350 g (2+1/3 cups) All-purpose Flour
1 tsp Salt
30 g (2 tbsp) White Sugar
200 g (1 cup) Unsalted Butter, chilled and cut in small and thin cubes
about 50 ml (3-4 tbsp) Iced Water
For the Filling:
About 5 Apples (900 g), I used Ambrosia Apples
1-2 tbsp Lemon Juice
100 g (1/2 cup) Light Brown Sugar
1 large tsp Cinnamon
30 g (2tbsp) Melted Unsalted Butter
30 g (2 tbsp) Cornstarch
APPLE MUFFIN DOUGHNUTS
300 g (2+1/2 cups) all purpose flour
pinch of salt
75 g (1/3 cup) sugar
6 g (1+1/2 tsp) baking powder
90 g (1/3 cup + 1 tbsp) unsalted melted butter
3 eggs, room temperature OR 170 G (3/4 cup) APPLESAUCE + 1/2 TSP BAKING POWDER
60 g (1/4 cup) water, lukewarm or room temperature
2 apples, about 290 g-10 oz peeled, cut out the core and chopped apples
about 1 tbsp lemon juice
Topping:
110 g (1/2 cup) granulated sugar
1 tsp cinnamon
55 g (1/4 cup) unsalted butter, melted
APPLE STRUDEL
Dough:
250 g (1+2/3 cups) All Purpose Flour
Pinch of salt
1 Egg
18 g (3 tbsp) Vegetable Oil (flavorless, I used Sunflower)
About 60 ml (1/4) Water
Filling:
About 5 Apples, Red Delicious (850 g)
3 tablespoons Lemon Juice (about ½ Lemon Juice)
50 g (1/3 cup) Raisin
50 g (3-4 tbsp) Pine Nuts
70 g (3 tbsp) Sugar
1 ½ tsp Cinnamon
70 g (2,5 oz) Cookies, crumbled
APPLE CRUMBLE MUFFINS
Crumble:
40 g (1/3 cup) All Purpose Flour
25 g (2 tablespoons) Light Brown Sugar
½ teaspoon Cinnamon Powder
Pinch of Salt
25 g (2 tablespoons) Unsalted Butter, chilled and cut in small cubes
Muffins:
220 g (1 + ¾ cups) All Purpose Flour
6 g (1 ½ teaspoon) Baking Powder
2 teaspoons Cinnamon Powder
Pinch of Salt
80 g (1/3 cup) Unsalted Butter, room temperature
120 g (1/2 cup) Light Brown Sugar
2 Eggs, room temperature
1 teaspoon Vanilla Paste or Exctract
110 ml Milk (1/2 cup) + ½ tablespoon Vinegar
200 g (7 oz) Apples cut in small cubes (from about 2 Apples)
2 tablespoons Fresh Lemon Juice
1 Tablespoon Cornstarch
APPLE MUG CAKE:
40 g (1/3 cup) chopped apple
24 g (2 tbsp) light brown sugar*
1/2 tsp cinnamon
22 g (1+1/2 tbsp) unsalted butter
37 g (4 tbsp) all purpose flour
1/4 tsp baking powder
10 g (2 tsp) milk, room temperature or warm
