Let's make sweet potato bread✨ It's moist, soft and oh-so-satisfying. It's the perfect snack anytime of the day 😋
9x5 loaf pan
Coconut Oil 1/2 cup (105 g)
Sugar 3/4 cup (180 g)
Eggs 2
Coconut Milk 1/3 cup (100 g)
All Purpose Flour 1 3/4 cup (290 g)
Baking Soda 1 tsp
Salt 1/4 tsp
Cinnamon 1/2 tsp
Nutmeg 1/2 tsp
Mashed Sweet Potato 1 1/2 cup (14 oz before cooking)
1. Peel and dice the sweet potato. Steam over medium high heat for 20 minutes.
2. Preheat the oven to 350 F. Line a loaf pan with parchment paper.
3. In a large mixing bowl, whisk coconut oil and sugar together. Add eggs and mix; add coconut milk and mix well.
4. In another bowl, combine the dry ingredients: flour, baking soda, salt, cinnamon, and nutmeg, mix well. Check the sweet potato, mash and set aside.
5. Stir the dry ingredients into the bowl of wet ingredients, mix until just combined. Fold in the mashed sweet potato.
6. Pour the batter into a loaf pan, lightly drop the pan on the counter once to force out the air bubbles. Bake for 1 hour. When the loaf is done, insert a toothpick in the center, it should come out clean. Let cool for 30 minutes before slicing. Serve with coffee, or tea, and/or ice cream 🤩
Substitutions: use any cooking oil or melted butter in place of coconut oil; use milk, heavy cream, plant based milk or even water in place of coconut milk.
