Today we will make a Bochet Mead. For this we need to caramelize a part of our honey.
It's the first time I try this kind of Honey fruit wine but it works well and it is a realy easy process.

900g Banana (without shell)
500g Caramelized honey
620g Honey
white wine yeast 16% tollerance
SG 1.105
