Resep Kalio Daging & Ubi (untuk 10-11 porsi)
Bumbu halus:
10 buah bawang merah
5 buah bawang putih
15 buah cabai merah besar atau 20 cabai keriting
10 buah cabai rawit merah
2 cm jahe
8 buah kemiri
1 sdt ketumbar, sangrai
3 cm kunyit
½ sdt jintan
Minyak goreng
Bahan pelengkap:
800 gr daging sengkel, potong
500 gr ubi jepang, kupas, potong
Bahan aromatik:
2 batang serai
2 jempol lengkuas
3 lembar daun salam
3 lembar daun jeruk
100 gr kelapa sangrai, opsional
Bahan lainnya:
210 ml santan kental
1,2 liter air / secukupnya
Royco Bumbu Kaldu Sapi
¼ sdt gula, opsional
Rempah:
2 butir cengkih
3 butir kapulaga
½ batang kayu manis
1 butir bunga lawang
Langkah:
1. Blender bumbu halus dengan minyak, lalu tumis hingga minyak keluar
2. Masukkan serai, lengkuas, daun salam, daun jeruk, cengkeh, kapulaga, kayu manis, bunga lawang, tumis hingga wangi, lalu masukkan kelapa sangrai yang sudah di blender, aduk rata
3. Masukkan daging, air, garam, merica dan royco kaldu sapi, masak hingga 90 menit
4. Panaskan minyak, lalu goreng ubi hingga sedikit kecokelatan
5. Masukkan ubi, santan, tambahan air, masak kembali hingga air menyusut dan mengental
6. Kalio daging dan ubi siap disajikan

Beef & Sweet Potato Kalio Recipe (yield: 10-11 servings)
Blended spices:
10 pc shallot
5 clove garlic
15 pc large red chili or 20 pc curly chili
10 pc red bird’s eye chili
2 cm ginger
8 pc candlenut
1 tsp coriander, toasted
3 cm turmeric
½ tsp cumin
Oil
Add-ons:
800 g beef shank, sliced
500 g Japanese sweet potato, peeled, sliced
Aromatics:
2 pc lemongrass
2 thumb galangal
3 pc bay leaf
3 pc kaffir lime leaf
100 g toasted coconut, optional
Others:
210 ml thick coconut milk
1.2 liter water, or as needed
Royco Beef Stock Powder
¼ tsp sugar, optional
Spices:
2 pc clove
3 pc cardamom
½ pc cinnamon
1 pc star anise
Steps:
1. Blend the spices with oil. Sauté until the oil seeps out.
2. Add the lemongrass, galangal, bay leaves, kaffir lime leaves, clove, cardamom, cinnamon, and star anise. Sauté until fragrant. Then, add the blended toasted coconut in. Mix well.
3. Add the meat, water, salt, pepper, and Royco Beef Stock Powder. Cook for 90 minutes.
4. Heat some oil and fry the sweet potatoes until a bit browned.
5. Add the sweet potatoes, coconut milk, and additional water in. Cook until reduced and thickens.
6. Beef & Sweet Potato Kalio is ready to serve.
