Nearly every team now travels to the Tour de France with a team chef, and every day the chef makes batch of rice cakes for the riders. When we spent the day with Hannah Grant (@dailystews on Twitter) we learned how to make the rice cakes that fuelled Alberto Contador and Roman Kreuziger to 4th and 5th at the 2013 Tour.
It's probably easiest to cook along with Hannah and adjust your ingredients as you go as Hannah is cooking for 8 hungry pro cyclists. But, for starters, here are the ingredients that she uses:
All measures are approximate, and to feed 8.
Short Grain Rice - 1kg
Coconut Milk - 2 tins
Apple Juice - 1 litre
Water - 1 - 2 litres (approx)
Golden Raisins, Dried Apple Slices, Brown Sugar and Cinnamon to taste.
CAUTION - Rice cakes have a particularly short shelf life.
