Ingredients For Gongura Fish Masala:
1.Fish - 5 pieces
2.Gongura/Sorrel Leaves - 2 bunches
3.Onion - 1 large
4.Tomato - 2 medium size
5.Dry Red Chilli - 2
6.Green Chilli - 2
7.Cumin Seeds - 1 tsp
8.Mustard Seeds - 1 tsp
9.Ginger & Garlic Paste - 1 & 1/2 tbsp
10.Salt to taste
11.Turmeric Powder - 1/2 tsp
12.Red Chilli Powder - 2 tbsp
13.Water as required
14.Ghee - 1 tbsp
15.Curry Leaves
16.Oil - 4 tbsp
Gongura Paste Preparation:
1.Add 1 tbsp more oil to the pan or kadai.
2.Add chopped tomato & cook till it turn soft.
3.Add gongura leaves & cook till it shrinks.
4.Cool this & Blend to a smooth paste.
Gongura Fish Masala Process:
1.Add 3 tbsp more oil in another kadai.
2.Add dry red chilli's,green chilli's,cumin seeds,mustard seeds & fry it for few seconds.
3.Add chopped onion & fry till it turn transparent.
4.Add ginger garlic paste & saute until the raw smell goes off.
5.Add salt,turmeric powder,red chilli powder & fry for 2 mins over low flame.
6.Add gongura paste & fry until the mixture smells good.
7.Pour water as per your consistency & bring it to a boil.
8.Cook till bubbles raises.
9.Drop the fish pieces & close the lid.
10.Cook over low heat for 5 mins.
11.Add curry leaves.
12.Gently flip the pieces & close the lid.
13.Cook on both sides until done.Fish piece bulge a bit when cooked completely.
14.Add ghee & saute well.
15.Gongura Fish Masala is ready.
Cooking Tips For Gongura Fish Masala:
1.Cook tomatoes completely & add gongura leaves as it take less time to cook.
2.For thick gravy use less water ,its up to your consistency & adjust the salt,red chili powder accordingly.
