Super healthy Cruciferous Vegetable Salad!
You need kale, green and purple cabbage, a handful of sunflower seeds, dried cranberries, chia seeds, and walnuts.
Cut the cabbage into quarters and use a Swiss peeler to shred it.
This salad detoxifies the liver and contributes greatly to stomach health.
Kale and Cabbage are Cruciferous vegetables. Cruciferous vegetables are an incredible source of antioxidants, sulforaphane, fiber, vitamins C, E, and K and many more.
This is why cruciferous vegetables are anticancer, antidiabetic, and anti-inflammatory.
Chop the kale and use the salad spinner to strain moisture from it. You can shred more than you need and keep it for the coming days. Even if you keep it for more than a week it’s still as fresh as ever. Add the dressing when you are serving it.
Now it’s time to add some sunflower seeds, dried cranberries, chia seeds, and walnuts.
Walnuts and chia seeds are rich in nutrients such as protein, calcium, magnesium, manganese, phosphorus, potassium, zinc, selenium, vitamin B’s, omega-3 fatty acid, antioxidants and fiber.
Add olive oil and apple cider vinegar for the finishing touch. Enjoy a super healthy salad!
