We took a few hours when we were in Port O'Connor last month, and tested out a Chittum Skiff - the Laguna Madre 18 II. This skiff is supposed to be the Florida answer to the demands Texas saltwater makes on technical poling skiffs. Needless to say, this is one impressive skiff. It turns in circles with little effort holding a pivot point, poles backwards almost as easily as forward and it holds in the wind (as you can see). This skiff is a half carbon fibre layup. Fit and finish inside holds can be seen on video fairly well. Essentially, this is the Ferrari of Technical poling skiffs, and looks like one even when it's sitting on the trailer.
